- Responsible for daily Housekeeping & Organization of the Laboratory.
- Responsible for daily sampling of products at Kitchen plant for Testing, Micro, Incubation, Retention and daily inspection of incoming raw materials.
- Responsible for relieving on-line QC checkers during breaks & on their absence.
- Responsible for mixing spice oil blend and keeping track of expiry dates of these ingredients (Stock takes).
- Responsible for isolation of products that are out of specification (On holds) and taking samples for evaluation.
- Responsible for daily calibration of the refractometer, pH meter and completion of the calibration documentation.
- Responsible for completion of all quality pack documents (i.e. retention sample sheet, final product inspection form, daily inspection form and process control documents).
- Responsible for issuing process documentation for processes in the Kitchen Plant as per the production schedule.
- Responsible for CIP verification and taking swabs at processing tanks and Tomato Sauce lines. Report on deviations to the Production Controller.
- Responsible for checking process parameters on CCP hourly/30min.
- Responsible for results recording, reporting and coordination of out of spec results with Production Controller for corrective action to be taken.
- Responsible for releasing Brines, Chakalaka and Sauces to the filling lines (Canning, Kitchen and Salads).
- Responsible for performing the following tests daily per period / each batch sample collected:
- pH Test with a pH Meter Brix Test with a Refractometer Salt Titration Product Viscosity Acidity / Volatile Acid On-line Sensory Evaluation Checking Vacuum.
- Quality Work Experience Student, highly advantageous pupil will be the ones that require Practical Training 1 and Practical Training 2 for a successful completion of their qualification.
